Ingredients

  • 2 cups of kontonmire leaves (cocoyam leaves), thoroughly washed and chopped
  • 500g of fish or meat (such as smoked fish, tilapia, or beef), cleaned and cut into pieces
  • 2 medium-sized onions, finely chopped
  • 3 ripe tomatoes, blended or finely chopped
  • 3 tablespoons of palm oil
  • 1 tablespoon of ground dried shrimp (optional)
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 fresh chili peppers (optional), finely chopped
  • Salt and pepper to taste
  • Water for cooking

How to prepare

  • Heat the palm oil in a large pot over medium heat.
  • Add the chopped onions, minced garlic, grated ginger, and chopped chili peppers. Sauté until the onions become translucent and aromatic.
  • Stir in the blended or finely chopped tomatoes and cook until the mixture thickens and the oil separates.
  • Add the fish or meat pieces to the pot and cook for a few minutes until they are partially cooked.
  • Pour enough water to cover the ingredients in the pot, reduce the heat, and simmer for about 15 minutes.
  • Add the kontonmire leaves to the pot, season with salt and pepper, and simmer for an additional 10-15 minutes until the leaves are tender and well incorporated into the stew.
  • Adjust the seasoning according to your taste preferences.
  • Serve the kontonmire stew hot with a side of your choice, such as boiled yam, rice, or fufu.
